Jammy Thumbprint Biscuits!

These are my scrummy Jammy thumbprint biscuits! They just melt in your mouth! And you can use any flavour jam you like!


The recipe:

-225g unsalted butter at room temperature
-225g Caster sugar
-Grated zest of 1 lemon
-1/2 Tsp of Vanilla extract
-2 Egg yolks
-2 Tbsp Milk (you can use any milk you like)
-280g Plain Flour
-Any flavoured Jam

To make:

-Beat the butter and sugar together in a large bowl until light and fluffy (you'll need a bit of elbow grease!) 
-Then beat in the Lemon zest and Vanilla extract. Followed by the 2 Egg yolks and then the milk
-Fold half of the flour in and stir gently, and then add the rest. Try not to over work the mixture or the biscuits will be tough.
-Bring together the dough in to a large ball, and wrap in some cling film and refrigerate for 30mins. Preheat oven to 180c.
-After the 30mins in the fridge, take it out and roll the dough in to small balls, about 3cm in size. Then place them on a greased baking tray about 3cms apart from eachother
-Use your thumb to press an indentation in the middle of each one and then spoon about half a tsp of the jam in to the middle
-Bake in the oven for about 15 minutes at 180c, until they are firm to touch and golden brown on the bottom. Leave to cool on a wire rack and then enjoy!
